- 2 tablespoons apple cider vinegar
- 2 tablespoons maple syrup
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 cups romaine lettuce
- roughly chopped
- 1 medium apple
- cored and chopped
- ½ cup pecans
- ½ cup dried cranberries
- ⅓ cup crumbled feta cheese
Instructions
- Preheat the oven to 375°F (190°C). Season the chicken breasts with garlic powder, onion powder, salt, and black pepper. Drizzle with olive oil and bake for 25-30 minutes until cooked through.
- While the chicken is baking, whisk together extra-virgin olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper in a small bowl to create the dressing.
- Once the chicken is cooked, allow it to cool slightly, then chop it into bite-sized pieces.
- In a large bowl, combine the chopped romaine lettuce, chopped apple, pecans, dried cranberries, and crumbled feta cheese.
- Add the chopped chicken to the salad mixture and drizzle with the prepared dressing. Toss to combine.
