  • ¼ cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups romaine lettuce
  • roughly chopped
  • 1 medium apple
  • cored and chopped
  • ½ cup pecans
  • ½ cup dried cranberries
  • ⅓ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Season the chicken breasts with garlic powder, onion powder, salt, and black pepper. Drizzle with olive oil and bake for 25-30 minutes until cooked through.
  2. While the chicken is baking, whisk together extra-virgin olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper in a small bowl to create the dressing.
  3. Once the chicken is cooked, allow it to cool slightly, then chop it into bite-sized pieces.
  4. In a large bowl, combine the chopped romaine lettuce, chopped apple, pecans, dried cranberries, and crumbled feta cheese.
