- 4 pieces boneless
- skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cloves garlic minced
- 1 cup apple cider
- ½ cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- ½ teaspoon cinnamon
- 4 small sweet potatoes peeled and cubed
- 1 large apple cored and sliced
- ½ cup pecans chopped
- fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat.
- Add the chicken breasts and cook until browned, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant.
- Stir in apple cider, chicken broth, Dijon mustard, thyme, and cinnamon. Bring to a simmer.
- Add sweet potatoes and apples to the skillet, then place the chicken on top.
- Cover and bake for 25 minutes or until chicken is cooked through and vegetables are tender.
- Top with chopped pecans and garnish with fresh parsley before serving.
Notes
Feel free to substitute other nuts if you prefer. This dish pairs nicely with a side salad.
