Cozy up with this delicious autumn chicken dinner recipe that combines tender chicken breasts with a flavorful apple cider sauce and roasted sweet potatoes and apples.


Ingredients

  • 4 pieces boneless
  • skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 cup apple cider
  • ½ cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon cinnamon
  • 4 small sweet potatoes peeled and cubed
  • 1 large apple cored and sliced
  • ½ cup pecans chopped
  • fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat.
  4. Add the chicken breasts and cook until browned, about 5-7 minutes per side. Remove and set aside.
  5. In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant.
  6. Stir in apple cider, chicken broth, Dijon mustard, thyme, and cinnamon. Bring to a simmer.
  7. Add sweet potatoes and apples to the skillet, then place the chicken on top.
  8. Cover and bake for 25 minutes or until chicken is cooked through and vegetables are tender.
  9. Top with chopped pecans and garnish with fresh parsley before serving.

Notes

Feel free to substitute other nuts if you prefer. This dish pairs nicely with a side salad.
