Description

Authentic German Lebkuchen is a delightful spiced cookie that brings the flavors of the holiday season into your home. With a mix of nuts and candied peels, these cookies are a true Bavarian treat.


Ingredients

  • 1 1/4 cup packed brown sugar
  • 1/4 cup honey
  • 1 teaspoon quality pure vanilla extract
  • 2 cups almond flour
  • 2 cups hazelnut flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 teaspoons Lebkuchengewürz
  • 4 ounces candied lemon peel
  • 4 ounces candied orange peel
  • 1/4 cup all-purpose flour
  • Backoblaten or white communion wafers
  • Blanched whole almonds cut in half lengthwise
  • 3 ounces quality dark or milk chocolate
  • 2 teaspoons coconut oil
  • 1 cup sifted powdered sugar
  • 3 tablespoons water or milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking sheet with Backoblaten or white communion wafers.
  2. In a bowl, whisk together the eggs, brown sugar, honey, and vanilla extract until well combined.
  3. In another bowl, combine the almond flour, hazelnut flour, salt, baking powder, and Lebkuchengewürz.
  4. Gradually fold the dry ingredients into the wet mixture. Add the candied lemon and orange peels, coating them in the all-purpose flour to prevent sticking, then fold them into the batter.
  5. Spoon the batter over the Backoblaten, shaping them as desired. Top each cookie with half a blanched almond.
  6. Bake in the preheated oven for 30 minutes or until lightly browned.
  7. While the cookies are baking, prepare the chocolate glaze by combining chocolate and coconut oil in a bowl, microwaving until melted.
  8. For the sugar glaze, mix the sifted powdered sugar with water or milk until smooth.
  9. Once the Lebkuchen are cooled, drizzle with the chocolate glaze and finish with the sugar glaze as desired.

Notes

For the best flavor, use homemade Lebkuchengewürz and candied peel instead of store-bought. Adjust the sweetness of the glazes according to your preference.
