Description

Delightfully moist and spiced, these Applesauce Muffins are the perfect treat for breakfast or a snack. With the warm flavors of cinnamon and nutmeg, they are irresistible.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • melted
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1/3 cup unsalted butter
  • melted
  • 1/4 cup white sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. In another bowl, combine the melted butter, white sugar, brown sugar, and vanilla extract until well mixed.
  4. Add the eggs and applesauce to the wet ingredients and mix until fully incorporated.
  5. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. While the muffins are baking, prepare the cinnamon sugar topping by combining the melted butter, white sugar, and cinnamon in a small bowl.
  9. Remove the muffins from the oven and brush the tops with the cinnamon sugar mixture while they are still warm.
  10. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, consider mixing in walnuts or raisins. These muffins freeze well for up to 3 months.
