Ingredients

  • thawed overnight in the fridge
  • 3/4 cup apricot jam
  • divided
  • 1/4 cup + 1 tablespoon granulated sugar
  • divided
  • 1/4 cup brown sugar
  • 2 tablespoons flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon lemon juice
  • pinch Kosher salt
  • 2 Granny Smith apples
  • cored and sliced into 1/4” thick slices
  • 1 egg
  • beaten
  • 4 tablespoons cold butter
  • cubed
  • vanilla ice cream
  • for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and fit it into a tart pan, trimming excess.
  3. Spread 1/2 cup of apricot jam evenly over the pastry base.
  4. In a bowl, mix 1/4 cup granulated sugar, brown sugar, flour, cinnamon, lemon juice, and a pinch of salt.
  5. Toss the sliced apples with the sugar mixture until well coated.
  6. Arrange the apple slices over the jam on the pastry.
  7. Dot the top with cubed cold butter.
  8. Brush the edges of the pastry with the beaten egg.
  9. Bake for 25-30 minutes or until the apples are tender and the pastry is golden brown.
  10. Let it cool slightly, then serve warm with a scoop of vanilla ice cream.
