- 1 partially baked tart shell
- juice of one lemon
- 3 to 4 apples Granny Smith
- Pink Lady
- Gala
- and/or Honeycrisp
- ⅓ cup + 1 tbsp granulated sugar divided
- ½ cup almond flour
- 3 tablespoon unsalted butter divided
- 1 egg yolk
- 1 pinch salt
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract
- honey for drizzling
- 1 ½ cups all-purpose flour
- ½ cup confectioner’s sugar
- ½ teaspoon salt
- zest of ½ a lemon
- 9 tablespoon unsalted butter diced and chilled
- 1 large egg yolk stirred
- 2 to 3 teaspoon ice water
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the tart shell by lightly baking it according to your preferred method and set it aside to cool.
- In a mixing bowl, combine the almond flour, ⅓ cup sugar, 3 tablespoons of butter, egg yolk, salt, vanilla extract, and almond extract, and mix until well combined.
- Spread the almond mixture evenly over the cooled tart shell.
- Slice the apples thinly and soak them in lemon juice to prevent browning.
- Arrange the apple slices over the almond mixture in a rose pattern, starting from the outside and working inward.
- Sprinkle the remaining 1 tablespoon of sugar on top of the apples, and dot with the remaining 1 tablespoon of butter.
- Bake in the preheated oven for about 30 minutes, or until the apples are tender and slightly caramelized.
- Remove from the oven, let cool slightly, then drizzle with honey before serving.
Notes
For added flavor, consider using a mix of different apple varieties. Make sure to slice the apples thinly for the best presentation and even cooking.
