Ingredients

  • juice of one lemon
  • 3 to 4 apples Granny Smith
  • Pink Lady
  • Gala
  • and/or Honeycrisp
  • ⅓ cup + 1 tbsp granulated sugar divided
  • ½ cup almond flour
  • 3 tablespoon unsalted butter divided
  • 1 egg yolk
  • 1 pinch salt
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • honey for drizzling
  • 1 ½ cups all-purpose flour
  • ½ cup confectioner’s sugar
  • ½ teaspoon salt
  • zest of ½ a lemon
  • 9 tablespoon unsalted butter diced and chilled
  • 1 large egg yolk stirred
  • 2 to 3 teaspoon ice water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the tart shell by lightly baking it according to your preferred method and set it aside to cool.
  3. In a mixing bowl, combine the almond flour, ⅓ cup sugar, 3 tablespoons of butter, egg yolk, salt, vanilla extract, and almond extract, and mix until well combined.
  4. Spread the almond mixture evenly over the cooled tart shell.
  5. Slice the apples thinly and soak them in lemon juice to prevent browning.
  6. Arrange the apple slices over the almond mixture in a rose pattern, starting from the outside and working inward.
  7. Sprinkle the remaining 1 tablespoon of sugar on top of the apples, and dot with the remaining 1 tablespoon of butter.
  8. Bake in the preheated oven for about 30 minutes, or until the apples are tender and slightly caramelized.
  9. Remove from the oven, let cool slightly, then drizzle with honey before serving.

Notes

For added flavor, consider using a mix of different apple varieties. Make sure to slice the apples thinly for the best presentation and even cooking.
