Ingredients
- Granny Smith Apples
- Egg Yolks

Instructions
- Preheat your oven to 350°F (175°C) and prepare your tartlet pans.
- Peel, core, and slice the Granny Smith apples, then toss them with a splash of apple cider vinegar and cinnamon.
- In a saucepan, combine whole milk and bring it to a simmer.
- In a bowl, whisk together egg yolks and cornstarch until combined.
- Slowly pour the hot milk into the egg mixture, whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook on low heat, stirring constantly, until thickened.
- In another bowl, prepare the streusel by combining butter, flour, and sugar, and then mix until crumbly.
- Fill the tartlet shells with the pastry cream and top with the sliced apples, followed by the streusel topping.
