  • 3 tbsp apple butter
  • 1 medjool date
  • 1 tsp yellow miso paste

  • 1/4 tsp cardamom
  • 1/4 tsp kosher salt or more to taste
  • 3/4 cup soy milk
  • 1/3 cup chia seeds
  • 3 tbsp gluten-free rolled oats
  • 3 tbsp walnuts or pecans
  • 2 medjool dates
  • 2 apples diced or thinly sliced
  • 2 tsp maple syrup
  • 1/4 tsp cinnamon

Instructions

  1. In a bowl, combine the plant-based yogurt, apple butter, medjool date, yellow miso paste (if using), vanilla extract, cinnamon, cardamom, salt, and soy milk. Mix well until smooth.
  2. Stir in the chia seeds, cover, and refrigerate for at least 2 hours or overnight until it thickens to a pudding-like consistency.
  3. For the crumble, blend the rolled oats, walnuts or pecans, and two medjool dates until crumbly. Set aside.
  4. In a pan, cook the diced apples with maple syrup and cinnamon over medium heat until softened, about 5-7 minutes.
  5. Layer the chia pudding, stewed apples, and crumble in jars or bowls. Serve immediately or chill until ready to enjoy.

Notes

Feel free to adjust the sweetness by adding more maple syrup or dates according to your taste. This recipe can be made a day in advance for a quick dessert option.
