Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a springform pan by greasing it lightly.
  2. In a mixing bowl, combine graham crumbs, brown sugar, cinnamon, and melted butter to form the crust. Press the mixture into the bottom of the springform pan.
  3. Peel and slice the apples, then toss them with brown sugar and cinnamon. Spread them evenly over the crust.
  4. For the crisp topping, mix flour, brown sugar, cinnamon, oats, and melted butter in a separate bowl. Sprinkle this mixture over the apples.
  5. In a large bowl, beat the cream cheese, granulated sugar, brown sugar, and cinnamon until smooth. Add cornstarch, vanilla extract, and sour cream while mixing.
  6. Incorporate the eggs, one at a time, making sure not to overmix. Pour the cheesecake batter over the apple filling.
  7. Place the springform pan in a larger baking dish. Fill the outer dish with boiling water until it reaches halfway up the sides of the springform pan.
  8. Bake in the preheated oven for about 30 minutes, or until the edges are set but the center still jiggles slightly.
  9. Remove the cheesecake from the oven and let it cool before refrigerating for at least four hours or overnight before serving.
