Instructions
- Preheat your oven to 325°F (163°C) and prepare a springform pan by greasing it lightly.
- In a mixing bowl, combine graham crumbs, brown sugar, cinnamon, and melted butter to form the crust. Press the mixture into the bottom of the springform pan.
- Peel and slice the apples, then toss them with brown sugar and cinnamon. Spread them evenly over the crust.
- For the crisp topping, mix flour, brown sugar, cinnamon, oats, and melted butter in a separate bowl. Sprinkle this mixture over the apples.
- In a large bowl, beat the cream cheese, granulated sugar, brown sugar, and cinnamon until smooth. Add cornstarch, vanilla extract, and sour cream while mixing.
- Incorporate the eggs, one at a time, making sure not to overmix. Pour the cheesecake batter over the apple filling.
- Place the springform pan in a larger baking dish. Fill the outer dish with boiling water until it reaches halfway up the sides of the springform pan.
- Bake in the preheated oven for about 30 minutes, or until the edges are set but the center still jiggles slightly.
- Remove the cheesecake from the oven and let it cool before refrigerating for at least four hours or overnight before serving.
