  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter room temperature
  • 2/3 cup sugar
  • 2 eggs-room temperature
  • 1 1/2 teaspoon vanilla extract
  • 1/2 cup milk-room temperature
  • 12 oz. brick-style cream cheese-room temperature
  • 1/2 cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1 egg
  • 3/4 cup powdered sugar
  • 2 Tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the crisp topping ingredients and set aside.
  3. For the apple filling, toss the diced apples with granulated sugar and ground cinnamon. Set aside.
  4. In a large mixing bowl, combine flour, baking powder, and salt for the muffins. In another bowl, beat together room temperature butter and sugar until creamy. Add eggs, vanilla extract, and milk, mixing well.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. In a separate bowl, beat together the cream cheese, sugar, flour, vanilla, and egg until smooth for the cheesecake filling.
  7. Fill each muffin cup with a spoonful of muffin batter, then add a layer of the cheesecake filling, followed by a layer of the apple filling. Top with crisp topping.
  8. Bake for 25-30 minutes or until the tops are golden and a toothpick comes out clean.
  9. For the icing, whisk together powdered sugar, milk, and vanilla until smooth, and drizzle over cooled muffins.

Notes
