- 2 cups (260g) all-purpose flour
- 2 cups (175g) uncooked quick cook oats
- 3/4 tsp baking soda
- 1 3/4 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 3/4 cup (168g) unsalted butter
- room temperature
- 3/4 cup (168g) packed light brown sugar
- 1/2 cup (104g) sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups (213g) peeled
- cored and diced Granny Smith apples
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, oats, baking soda, ground cinnamon, nutmeg, and salt.
- In a large mixing bowl, cream the unsalted butter with the brown sugar and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced apples until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For added texture, you can mix in some chopped nuts or raisins. Store cookies in an airtight container to maintain freshness.
