Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together 1 ¾ cup flour, baking powder, salt, and cinnamon.
- In another bowl, mix brown sugar and eggs until smooth. Add milk, vanilla, and melted butter, mixing well.
- Combine the wet and dry ingredients until just mixed. Gently fold in the diced apples.
- Divide the batter evenly among the muffin cups.
- In a small bowl, mix the topping ingredients: melted butter, granulated sugar, and cinnamon. Spoon a bit of the topping over each muffin.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool slightly before serving.
Notes
For a sweeter flavor, increase the brown sugar or add chopped nuts for added texture.
