Ingredients

- 2 medium apples peeled and thinly sliced
- 1 teaspoon ground cinnamon
- 1 tablespoon honey or maple syrup
- 1 teaspoon lemon juice
- 4 medium flour or whole wheat tortillas
- 2 tablespoons butter or oil for cooking
- Optional: 2 tablespoons cream cheese or nut butter
Instructions
- In a bowl, combine the sliced apples, ground cinnamon, honey or maple syrup, and lemon juice. Mix well to coat the apples.
- Heat a skillet over medium heat and add butter or oil.
- Place one tortilla in the skillet, then layer half of the apple mixture on one half of the tortilla.
- Fold the other half of the tortilla over the apples and cook until golden brown, about 2-3 minutes.
- Carefully flip the quesadilla and cook the other side until golden brown and the apples are tender.
- Repeat with the remaining tortillas and apple mixture. Serve warm with an optional spread of cream cheese or nut butter.
Notes
Feel free to mix in some nuts or other fruits for added texture and flavor.
