Description

This Apple Cider Cheesecake blends the rich flavors of creamy cheesecake with the seasonal taste of apple cider, resulting in a delightful dessert that’s perfect for any occasion.

Ingredients

Scale
  • 270g or 2 packed cups digestive cookies or graham crackers
  • 85g or 6 tablespoons butter melted
  • ¼ teaspoon salt
  • 2 tablespoons powdered sugar
  • 720g or 3 cups fresh apple cider
  • 3 full fat cream cheese bricks 227g each
  • softened and at room temperature
  • 200g or 1 cup brown sugar
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 240g or 1 cup sour cream
  • ⅓ cup reduced apple cider
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 2 tablespoons all purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a food processor, pulse the digestive cookies or graham crackers into fine crumbs. Add melted butter, salt, and powdered sugar, then pulse until well combined.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create the crust. Bake for 10 minutes, then remove and let cool.
  4. In a saucepan, reduce the fresh apple cider over medium heat until it thickens, about 15-20 minutes. Set aside to cool.
  5. In a large mixing bowl, beat the softened cream cheese with brown sugar and salt until smooth. Add vanilla extract and sour cream, mixing until combined.
  6. Add the reduced apple cider, cinnamon, eggs, and flour to the cream cheese mixture, mixing until fully incorporated.
  7. Pour the filling over the crust and smooth the top. Bake for 25-30 minutes or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour. Remove and refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, use fresh honeycrisp apple cider for a tart flavor. Always let the cheesecake chill fully for the best texture.
