Ingredients

  • Fuji apples
  • Gala apples
  • Honeycrisp apples
  • baby arugula
  • red onion
  • dried figs
  • goat cheese crumbles
  • raw pecan halves
  • maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and spread the raw pecan halves on a baking sheet.
  2. Drizzle the pecans with a bit of pure maple syrup and roast in the oven for about 10 minutes, until they are fragrant.
  3. While the pecans are roasting, slice the apples and red onion thinly, and chop the dried figs.
  4. In a large salad bowl, combine the baby arugula, sliced apples, red onion, figs, and goat cheese crumbles.
  5. Add the roasted pecans once they have cooled slightly.
