Ingredients

  • 1 medium onion
  • diced
  • 1 large leek
  • white and light green parts only
  • halved lengthwise
  • and thinly sliced
  • 3 large carrots
  • thinly sliced
  • 3 stalks celery
  • thinly sliced
  • 1 teaspoon kosher salt
  • 3 cloves garlic
  • chopped
  • 1 teaspoon dried powdered turmeric
  • 1 teaspoon poultry or all-purpose seasoning
  • 6 cups chicken broth
  • 1 13.5 ounce can coconut milk
  • 1 1/4 pounds boneless skinless thighs or breasts
  • 1 10 ounce bag frozen peas (optional)
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon kosher salt
  • or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced leek, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
  2. Stir in the garlic, turmeric, and poultry seasoning. Cook for an additional minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Add the chicken thighs or breasts. Reduce the heat and simmer for about 20 minutes, or until the chicken is cooked through.
  5. Remove the chicken, shred it with two forks, and return it to the pot.
  6. Stir in the coconut milk and frozen peas (if using). Heat through for an additional 5 minutes.
  7. Season with salt and pepper, and stir in the chopped parsley before serving.
