- 1/4 cup olive oil
- 1 medium onion
- diced
- 1 large leek
- white and light green parts only
- halved lengthwise
- and thinly sliced
- 3 large carrots
- thinly sliced
- 3 stalks celery
- thinly sliced
- 1 teaspoon kosher salt
- 3 cloves garlic
- chopped
- 1 teaspoon dried powdered turmeric
- 1 teaspoon poultry or all-purpose seasoning
- 6 cups chicken broth
- 1 13.5 ounce can coconut milk
- 1 1/4 pounds boneless skinless thighs or breasts
- 1 10 ounce bag frozen peas (optional)
- 1/4 cup chopped fresh parsley
- 1 teaspoon kosher salt

- 1/2 teaspoon black pepper
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced leek, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the garlic, turmeric, and poultry seasoning. Cook for an additional minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the chicken thighs or breasts. Reduce the heat and simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Stir in the coconut milk and frozen peas (if using). Heat through for an additional 5 minutes.
- Season with salt and pepper, and stir in the chopped parsley before serving.
