  • ½ cup all-purpose flour
  • 2 pounds beef chuck cut into 1-inch cubes
  • 2 to 3 tablespoons vegetable oil
  • 1 large yellow onion coarsely chopped
  • 5 garlic cloves minced
  • 2 jalapeño peppers seeds removed and chopped
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons ground coriander
  • 1 ½ teaspoons dried Mexican oregano
  • 2 tablespoons tomato paste
  • 1 cup beer
  • 2 cups veal or beef stock
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic, jalapeños, cumin, coriander, and oregano. Cook for 2-3 minutes until fragrant.
  3. Add the beef chuck cubes to the pot, browning on all sides.
  4. Sprinkle the all-purpose flour over the beef and stir well to coat.
  5. Mix in the tomato paste and pour in the beer, scraping any browned bits from the bottom of the pot.
  6. Add the roasted poblano and Hatch chili peppers, along with the veal or beef stock. Bring to a simmer.
  7. Reduce the heat to low and let the chili cook for about 30 minutes, stirring occasionally.
  8. Serve hot, garnished with chopped cilantro.

Notes

For an extra kick, feel free to add more jalapeños or some chili powder. Pair with cornbread for a complete meal.
