- 3 eggs
- ½ cup milk
- 4–5 cups canola oil for frying
- 3 cup powdered sugar
- 1 teaspoon vanilla
- ¼ cup milk for glaze
Instructions
- In a large mixing bowl, combine whole wheat pastry flour, all-purpose flour, cinnamon, nutmeg, granulated sugar, and baking powder.
- Add the chopped apples and mix until coated with the dry ingredients.
- In another bowl, whisk together the eggs and milk until well combined.
- Pour the egg mixture into the dry ingredients, stirring until just combined.
- In a deep skillet, heat the canola oil over medium heat until hot.
- Drop spoonfuls of the batter into the hot oil, frying until golden brown on each side, about 3-4 minutes.
- Remove the fritters and place them on paper towels to drain excess oil.
- For the glaze, whisk together powdered sugar, vanilla, and milk until smooth. Adjust consistency as desired.
- Drizzle the glaze over the fritters and serve warm.
