Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine chopped apples with light brown sugar, cinnamon, and ginger. Set aside.
- In another bowl, whisk together the egg, granulated sugar, vegetable oil, sour cream, and vanilla extract until smooth.
- In a separate bowl, mix the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the apple mixture gently into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
