Alice Springs Chicken is a deliciously marinated chicken dish that captures the flavors of the Outback. It’s baked to perfection and topped with bacon, mushrooms, and gooey cheese, making it a crowd-pleaser at any dinner table.
Ingredients
1/2 cup Dijon mustard
1/2 cup honey
1/4 cup mayonnaise
1 teaspoon lemon juice
4 boneless
skinless chicken breasts
2 tablespoons butter
8 ounces white button mushrooms
1 tablespoon olive oil
4 slices bacon
2 cups Colby Jack cheese
2 tablespoons fresh parsley
Salt and freshly ground black pepper
Instructions
- In a bowl, mix together the Dijon mustard, honey, mayonnaise, and lemon juice to create a marinade.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the oven to 350°F (175°C).
- In a skillet, melt butter and add sliced mushrooms. Sauté until softened, then remove from heat.
- In the same skillet, heat olive oil over medium heat. Remove the chicken from the marinade and cook each breast for about 5 minutes on each side until browned.
- Transfer the chicken to a baking dish. Top with sautéed mushrooms, cooked bacon, and shredded Colby Jack cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and the chicken is cooked through.
