- 1 cup flour
- 3 large eggs
- 1 cup Panko
- 1/4 cup parmesan cheese
- 1 Tablespoon Italian seasoning
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the zucchini into thin rounds and season with salt and pepper.
- Set up a breading station: in one bowl, place the flour; in a second bowl, beat the eggs; and in a third bowl, combine Panko, parmesan cheese, and Italian seasoning.
- Dredge each zucchini slice first in the flour, then dip into the egg, and finally coat with the Panko mixture.
- Place the breaded zucchini chips in the air fryer basket in a single layer. You may need to do this in batches.
- Air fry for 15-20 minutes or until golden brown and crispy, flipping halfway through.
- Remove from the air fryer and let cool slightly before serving.
