Instructions
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar until well mixed. Press this mixture into the base of a 7-inch springform pan.
- In another bowl, beat the softened cream cheese until smooth. Gradually add in the 2/3 cup sugar, 2 teaspoons vanilla extract, and dash of salt until combined.
- Add the eggs one at a time, mixing gently after each addition. Lastly, fold in the sour cream until fully incorporated.
- Pour the cheesecake filling over the graham cracker crust in the springform pan.
- Preheat your air fryer to 300°F. Once preheated, carefully insert the springform pan and cook for 25-30 minutes, or until the center is set and slightly jiggly.
- Remove the cheesecake from the air fryer and let it cool completely before chilling in the refrigerator for at least 4 hours.
- Serve chilled, with a dollop of whipped cream if desired.
