Ingredients
1¼ cups graham cracker crumbs
3 tbsp granulated sugar
5 tbsp unsalted butter melted
16 oz cream cheese softened
¾ cup powdered sugar sifted
1 tsp vanilla extract
1 cup cold heavy cream
1 cup fresh strawberries hulled and chopped
2 tbsp granulated sugar
1 cup fresh blueberries
2 tbsp granulated sugar
Instructions
- In a bowl, combine graham cracker crumbs, 3 tbsp sugar, and melted butter. Press into the bottom of a 9-inch pie pan to form the crust.
- In a large mixing bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth.
- In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
- For the red swirl, mash the chopped strawberries with 2 tbsp sugar until juicy. Set aside.
- For the blue swirl, mash the blueberries with 2 tbsp sugar until juicy. Set aside.
- Spread the cream cheese filling evenly over the crust. Drizzle the strawberry and blueberry mixtures over the filling and use a knife to swirl for a marbled effect.
- Cover and refrigerate the pie for at least 4 hours or until set. Slice and serve chilled.
Notes
For best results, allow the pie to set overnight. You can also top with additional fresh fruit for extra festive flair.
