- 2 large eggs
- 1 (13.25oz) box yellow cake mix
- chocolate chips or nuts for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mash the very ripe bananas until smooth.
- Add the eggs and cake mix to the mashed bananas, and stir until just combined.
- Pour the batter into the prepared loaf pan and, if desired, sprinkle chocolate chips or nuts on top.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely. Slice and serve.
Notes
Make sure your bananas are very ripe for the best flavor. You can add other mix-ins like dried fruits or spices if desired.
