- 2 cups packed shredded rotisserie chicken
- 2 medium zucchinis thinly sliced
- 1 cup shredded cheese
- 1 cup diced tomatoes
- 1/2 cup finely chopped onion
- 2 cloves garlic minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- In a large mixing bowl, combine the shredded rotisserie chicken, sliced zucchinis, diced tomatoes, sautéed onion and garlic, Italian seasoning, salt, and pepper.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake in the preheated oven for about 30 minutes or until the zucchinis are tender and the cheese is melted and bubbly.
- Allow to cool for a few minutes before serving.
Notes
Feel free to add other vegetables or seasonings according to your taste. Ensure to drain the tomatoes properly to avoid excess moisture.
