This Zesty Lemon Arugula Pasta Salad combines the peppery taste of arugula with fresh basil, vibrant cherry tomatoes, and a bright lemon dressing for a refreshing dish that’s perfect for any occasion.
Ingredients

8 oz pasta
4 oz arugula
8 basil leaves
1/2 cup cherry tomatoes
2/3 cup walnuts
1/3 cup parmesan
1.5 lemons
3/4 cup olive oil
1 Tbsp white balsamic vinegar
2 tsp dijon mustard
1 Tbsp capers
1 tsp caper brine
1 1/4 tsp salt
1/2 tsp black pepper
1/2 tsp honey
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and let cool.
- In a large mixing bowl, combine the arugula, basil, and cherry tomatoes.
- In a separate bowl, whisk together the walnuts, parmesan, lemon zest, lemon juice, olive oil, white balsamic vinegar, dijon mustard, capers, caper brine, salt, black pepper, and honey to make the dressing.
- Add the cooled pasta to the arugula mixture and pour the dressing over the top. Toss gently to combine.
- Serve immediately or refrigerate for later, allowing flavors to meld.
