Ingredients

4 oz arugula

8 basil leaves

1/2 cup cherry tomatoes

2/3 cup walnuts

1/3 cup parmesan

1.5 lemons

3/4 cup olive oil

1 Tbsp white balsamic vinegar

2 tsp dijon mustard

1 Tbsp capers

1 tsp caper brine

1 1/4 tsp salt

1/2 tsp black pepper

1/2 tsp honey


Instructions

  • Cook the pasta according to the package instructions until al dente. Drain and let cool.
  • In a large mixing bowl, combine the arugula, basil, and cherry tomatoes.
  • In a separate bowl, whisk together the walnuts, parmesan, lemon zest, lemon juice, olive oil, white balsamic vinegar, dijon mustard, capers, caper brine, salt, black pepper, and honey to make the dressing.
  • Add the cooled pasta to the arugula mixture and pour the dressing over the top. Toss gently to combine.
  • Serve immediately or refrigerate for later, allowing flavors to meld.
