Instructions
- Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans by greasing and flouring them.
- In a bowl, whisk together the cake flour, baking powder, and salt.
- In a large mixing bowl, cream the unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, whole milk, sour cream, and the melted white chocolate until well combined.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined.
- Gently fold in the fresh raspberries and white chocolate chips.
- Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- For the frosting, beat the unsalted butter until creamy, then gradually add powdered sugar and mix until smooth.
- Add heavy cream, vanilla extract, and melted white chocolate, mixing until the frosting is light and fluffy.
- Once the cakes are completely cool, stack them, spreading frosting in between layers and covering the top and sides.
- Garnish with fresh raspberries before serving.
