Description
This White Chicken Lasagna Soup is a creamy and comforting twist on classic lasagna, packed with tender chicken, fresh vegetables, and cheesy goodness.
Ingredients
2 boneless
skinless chicken breasts
halved
1 tablespoon olive oil
5 tablespoons salted butter
divided
1 yellow onion
diced
1 carrot
diced
2 celery stalks
diced
6–7 garlic cloves
minced
3 cups fresh broccoli
chopped
Kinder’s The Blend seasoning or equivalent blend of salt
black pepper
and garlic powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon herbes de Provence
Salt and pepper
to taste
1/3 cup all-purpose flour
6 cups chicken broth
2 cups heavy cream
10 lasagna sheets
broken into small pieces
1.5 cups Parmesan cheese
grated
Instructions
- Heat olive oil and 2 tablespoons of butter in a large pot over medium heat. Add the halved chicken breasts and cook until golden brown on both sides. Remove from the pot and set aside.
- In the same pot, add the remaining butter, onion, carrot, celery, and minced garlic. Sauté until the vegetables are softened.
- Stir in the broccoli and season with Kinder’s seasoning, garlic powder, onion powder, black pepper, and herbes de Provence.
- Sprinkle the flour over the vegetable mixture and stir to combine. Cook for 1-2 minutes, then gradually whisk in the chicken broth.
- Bring the mixture to a simmer and add the heavy cream. Stir to combine and return the cooked chicken to the pot.
- Add the broken lasagna sheets and let cook for about 15-20 minutes, or until the pasta is tender.
- Once cooked, stir in the Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with additional Parmesan cheese if desired.
Notes
You can easily customize this soup by adding any of your favorite vegetables or using pre-cooked chicken for a quicker meal.
