Ingredients

1 lb lean ground beef

1 tbsp olive oil

2 tbsp beef stock

1 tbsp smoked paprika

1 tsp cumin

1 tsp black pepper

1 tsp onion powder

3 garlic cloves

2 medium sweet potatoes

1 tbsp olive oil

1/2 tsp salt

1 cup cottage cheese

2 tbsp hot honey

Diced avocado

Chili flakes


Instructions

  • Preheat the oven to 400°F (200°C).
  • Peel and dice the sweet potatoes, then toss them with 1 tbsp olive oil and 1/2 tsp salt. Spread on a baking sheet and roast for 25-30 minutes, or until tender.
  • In a skillet, heat 1 tbsp olive oil over medium heat. Add the ground beef and cook until browned, about 5 minutes.
  • Add the minced garlic, smoked paprika, cumin, black pepper, onion powder, and beef stock (or water) to the skillet. Cook for another 5-7 minutes until fully combined and heated through.
  • To assemble, place the roasted sweet potatoes in a bowl, top with the seasoned beef, and add a generous scoop of cottage cheese on top.
