Ingredients
20–24 Medjool dates
⅔ cup creamy peanut butter
½ cup dry roasted peanuts
9 ounces chocolate chips or chocolate bar
1 teaspoon coconut oil – optional
Coarse sea salt – optional for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Pit the Medjool dates and stuff each one with a teaspoon of creamy peanut butter.
- Melt the chocolate chips or chocolate bar in a heatproof bowl over simmering water, adding coconut oil for a smoother consistency if desired.
- Dip each stuffed date into the melted chocolate, allowing excess to drip off, then place on the prepared baking sheet.
- Sprinkle dry roasted peanuts and coarse sea salt on top of the chocolate-coated dates.
- Chill in the refrigerator until chocolate is firm, about 30 minutes, before breaking into pieces and serving.
