Ingredients
2 large carrots washed and peeled
2 large cucumbers washed and peeled if desired
2 tablespoons lemon juice freshly squeezed
1 tablespoon olive oil extra virgin preferred
1 tablespoon fresh dill chopped finely
to taste salt preferably sea salt
to taste black pepper freshly ground
Instructions
- Using a spiralizer, create noodles from the carrots and cucumbers, or slice them thinly if you prefer.
- In a large bowl, combine the spiralized vegetables.
- In a small bowl, whisk together the lemon juice, olive oil, dill, salt, and black pepper.
- Pour the dressing over the vegetables and toss gently to coat.
- Serve immediately for the freshest flavor, or chill for up to 30 minutes before serving.
Notes
For extra flavor, feel free to add some cherry tomatoes or avocado. This salad is best enjoyed fresh but can be stored in the fridge for one day if needed.
