1 ½ cups graham cracker crumbs
6 tbsp unsalted butter
melted
¼ cup brown sugar
3 tbsp unsalted butter
4 (8 oz) packages cream cheese
softened
1 ¼ cups granulated sugar
1 tbsp vanilla bean paste or seeds from 1 vanilla bean
4 large eggs
1 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Mix until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a small saucepan, melt the 3 tbsp of butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
- In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy.
- Add the brown butter and vanilla bean paste (or seeds) to the cream cheese mixture, and mix until fully incorporated.
- Add the eggs one at a time, mixing well after each addition.
- Finally, fold in the sour cream until smooth.
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Bake in the preheated oven for 30 minutes or until the center is set and slightly jiggly.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour to prevent cracking.
- Remove from oven and refrigerate for at least 4 hours, preferably overnight, before serving.
Notes
For best results, use high-quality vanilla bean paste or fresh vanilla beans. Ensure the cream cheese is softened to room temperature for a smooth filling.
