The Best Mediterranean Baked Fish is a delightful dish that combines fresh seafood with vibrant vegetables and herbs, perfect for a healthy and flavorful meal.


Ingredients

1 Fish Fillets

1 teaspoon Paprika

1 teaspoon Italian seasoning

1 teaspoon Cajun seasoning old bay or creole seasoning

½ teaspoon Chilli flakes

1 teaspoon Fish seasoning optional

½ teaspoon Salt

½ teaspoon Blackpepper

3 tablespoon Cooking oil

2 cups Cherry tomatoes

¼ cup Olives

2 sprigs Parsley fresh

2 sprigs Thyme fresh

3 Garlic cloves minced or diced

½ teaspoon Of the mixed seasoning above

2 tablespoon Water

3 tablespoon Salted butter

Pinch of Salt and Pepper


Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine the paprika, Italian seasoning, Cajun seasoning, chili flakes, fish seasoning, salt, and black pepper.
  • Rub the spice mixture over the fish fillets and let them marinate for 10 minutes.
  • In a baking dish, arrange the cherry tomatoes and olives. Add the minced garlic, fresh parsley, fresh thyme, mixed seasoning, water, and salt and pepper.
  • Place the seasoned fish fillets on top of the tomato and olive mixture.
  • Drizzle cooking oil over everything and add salted butter in small pieces on top of the fish.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes or until the fish is flaky and cooked through.
  • Serve warm with the roasted tomatoes and olives over the top.
