3 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons peach puree (optional)


Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a bowl, whisk together the sifted flour, baking powder, and salt.
  • In a separate large bowl, cream together the softened butter, honey, and sugar until light and fluffy.
  • Add the eggs and vanilla extract, mixing until well combined.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients.
  • Fold in the diced peaches gently.
  • Divide the batter evenly among the cupcake liners and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cupcakes cool completely before frosting.
  • For the frosting, beat together the softened butter, powdered sugar, honey, and vanilla until smooth and creamy. Add peach puree if desired.
