The Best Fudgy Chewy Browkies (Brookies) by Savvy Bites combines the richness of brownies and the chewiness of cookies in one decadent treat.
Ingredients
95 g (¾ cups) plain (all-purpose) flour
2 tablespoons cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
225 g (1 ¼ cups) dark chocolate
chopped
56 g (¼ cups) butter
salted or unsalted
2 eggs *room temperature
100 g (¾ cups) caster or granulated sugar
90 g (½ cups) Demerara or raw sugar

1 teaspoon vanilla
85 g (½ cups) dark or milk chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a saucepan, melt the dark chocolate and butter together over low heat, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the eggs, caster or granulated sugar, and Demerara or raw sugar until well combined. Stir in the melted chocolate mixture and vanilla.
- Gradually fold in the flour mixture until just combined, then mix in the chocolate chips.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a richer flavor, use high-quality dark chocolate. Adjust the baking time for a fudgier or cakey texture according to your preference.
