Ingredients

300 grams active sourdough starter active and bubbly

650 grams warm water

1000 grams bread flour

50 grams honey

40 grams olive oil or avocado oil

20 grams fine sea salt

12 teaspoons ground cinnamon

1/2 cup brown sugar

1 tbsp flour


Instructions

  • In a large bowl, combine the active sourdough starter, warm water, honey, and oil, mixing until well combined.
  • Gradually add the bread flour and fine sea salt to the mixture, stirring until a shaggy dough forms.
  • Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 4-6 hours or until doubled in size.
  • Once risen, punch down the dough and turn it out onto a floured surface. Roll it into a rectangle about 1/2 inch thick.
  • In a small bowl, mix together the ground cinnamon, brown sugar, and flour. Sprinkle the mixture evenly over the rolled-out dough.
  • Roll the dough tightly into a log and pinch the seams to seal. Place the log seam-side down in a greased loaf pan.
  • Cover the loaf with a damp cloth and let it rise for another 1-2 hours until puffy.
  • Preheat your oven to 450°F (232°C). Score the top of the loaf with a sharp knife for better rising.
  • Bake for 30 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
