Ingredients
For the Chicken and Noodles:
8 oz (225 g) rice noodles (or spaghetti if preferred)
1 lb (450 g) boneless, skinless chicken breasts, thinly sliced
1 tablespoon sesame oil (or vegetable oil)
1 tablespoon soy sauce
1 tablespoon cornstarch
1 cup (100 g) shredded carrots
1 red bell pepper, thinly sliced
3 green onions, chopped
1/4 cup (30 g) roasted peanuts, roughly chopped
2 tablespoons fresh cilantro, chopped (optional, for garnish)
For the Peanut Sauce:
1/2 cup (125 g) creamy peanut butter
3 tablespoons soy sauce
1 tablespoon rice vinegar (or lime juice)
1 tablespoon honey (or brown sugar)
1 teaspoon fresh ginger, grated
2 cloves garlic, minced
1 teaspoon chili paste or Sriracha (adjust to taste)
1/2 cup (120 ml) warm water (to thin sauce as needed)
Instructions
Step 1: Prepare the Noodles
Bring a large pot of water to a boil. Add rice noodles and cook according to package directions (6–8 minutes). Stir occasionally. Drain and rinse with cold water. Set aside.
Step 2: Marinate the Chicken
In a bowl, mix sliced chicken with soy sauce and cornstarch. Let rest for 10 minutes while preparing the sauce.
Step 3: Make the Peanut Sauce
Whisk together peanut butter, soy sauce, rice vinegar, honey, ginger, garlic, and chili paste. Slowly add warm water until smooth and creamy. Adjust to taste.
Step 4: Cook the Chicken
Heat sesame oil in a skillet or wok over medium-high heat. Add chicken and cook 4–5 minutes until golden brown and cooked through.
Step 5: Add the Vegetables
Add shredded carrots and sliced bell pepper. Stir-fry for 2–3 minutes until crisp-tender.
Step 6: Combine Everything
Lower heat to medium. Add noodles to the pan, pour peanut sauce over, and toss until evenly coated. Add a splash of warm water if needed to loosen the sauce.
Step 7: Garnish and Serve
Remove from heat. Top with chopped peanuts, green onions, and fresh cilantro. Serve warm for best texture and flavor.
Notes
Add a squeeze of lime juice before serving for extra brightness.
For a vegetarian version, replace chicken with tofu or tempeh.
Leftovers can be reheated with a splash of water to restore creaminess.
Avoid freezing, as the peanut sauce may separate.
