1.75 lb potatoes
3.5 tbsp olive oil
1 tsp salt
0.5 tsp pepper
2.5 tbsp butter
1.75 cup cheese
0.5 tsp garlic powder
10 slices bacon
1 cup sour cream
0.25 bunch chives
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork. Toss with olive oil, salt, and pepper.
- Arrange the potatoes on a baking sheet and bake for 45 minutes, or until tender.
- Once cool enough to handle, cut the potatoes in half lengthwise and scoop out the insides, leaving a small border.
- In a skillet, melt butter over medium heat, then add cheese and garlic powder until melted.
- Fill each potato skin with the cheese mixture and return to the oven for an additional 10 minutes until crispy.
- Top with crumbled bacon, a dollop of sour cream, and chopped chives before serving.
