Ingredients

1/2 cup heavy cream
1 cup Mexican blend cheese
1 tbsp olive oil
1/2 tsp sea salt
4 garlic cloves
1/4 tsp cayenne pepper
4 cups shredded chicken
1 tsp dried oregano
1 tsp cumin
1 small yellow onion
4 cups reduced-sodium chicken broth
1/2 tsp black pepper
4 oz green chiles
8 oz cream cheese
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the shredded chicken, green chiles, cumin, oregano, cayenne pepper, sea salt, and black pepper. Mix well to combine.
- Add the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes.
- In a separate bowl, combine the softened cream cheese and heavy cream until smooth.
- Gradually add the cream cheese mixture to the pot, stirring continuously until well blended. Cook for an additional 5 minutes until heated through.
- Finally, stir in the Mexican blend cheese until melted and serve the chili hot.
Notes
For additional flavor, consider garnishing with fresh cilantro or avocado slices before serving.
