Description
This Tasty Easter Spring Salad with Goat Cheese combines fresh spring greens, juicy blueberries, and crunchy walnuts, all drizzled with a flavorful homemade dressing, making it a perfect light dish for your Easter celebrations.
Ingredients
1/2 cup chopped walnuts (lightly toasted for extra crunch)
5 oz mixed spring greens
1/2 cup crumbled goat cheese (softened at room temperature)
1 cup fresh blueberries
1 tbsp apple cider vinegar
1/4 cup olive oil (I use California Olive Ranch extra virgin)
1/4 tsp sea salt (fine grain preferred)
1/8 tsp black pepper (freshly ground for best flavor)
3 tbsp blueberries
1 tbsp powdered sweetener
Instructions
- In a dry skillet over medium heat, lightly toast the chopped walnuts until golden brown and fragrant, then set aside to cool.
- In a large bowl, combine the mixed spring greens, crumbled goat cheese, toasted walnuts, and fresh blueberries.
- In a small bowl, whisk together the apple cider vinegar, olive oil, sea salt, black pepper, 3 tbsp of blueberries, and powdered sweetener to create the dressing.
- Drizzle the dressing over the salad and gently toss to combine all ingredients evenly.
- Serve immediately and enjoy this refreshing salad!
Notes
For added flavor, consider adding sliced strawberries or other seasonal fruits. This salad can be made a few hours in advance, but add the dressing just before serving to keep the greens fresh.
