Ingredients

1 large sweet potato
peeled + cubed
1 tbsp olive oil
1 tsp smoked paprika
Salt & pepper to taste
½ lb ground beef (or turkey/lentils)
1 tbsp taco seasoning (or homemade: see tip!)
½ cup pico de gallo
¼ cup guacamole
2 tbsp sour cream (or dairy-free alt.)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper.
- Spread the sweet potato on a baking sheet and roast in the oven for about 25 minutes or until tender.
- While the sweet potatoes are baking, heat a skillet over medium heat and cook the ground beef (or turkey/lentils) until browned. Drain excess fat if necessary.
- Add taco seasoning to the meat and stir until well coated.
- Once the sweet potatoes are done, assemble the taco bowl by layering sweet potatoes, seasoned meat, pico de gallo, guacamole, and sour cream.
- Serve immediately and enjoy!
