Ingredients

4 slices bacon
cut into ½-inch thick pieces
1 small onion
diced
1 red bell pepper
diced
1 large sweet potato
peeled and diced into ½-inch cubes (approx 4 cups cubes)
2 cups kale leaves
roughly chopped
¼ teaspoon cumin
¼ teaspoon garlic powder
¼ teaspoon paprika
kosher salt and freshly ground black pepper
to taste
4 eggs
1 green onion
sliced
Instructions
- In a large skillet over medium heat, add the bacon and cook until crispy. Transfer to a paper towel-lined plate to drain.
- In the same skillet, add the onion and red bell pepper. Sauté until softened, about 5 minutes.
- Add the diced sweet potato to the skillet, along with cumin, garlic powder, paprika, salt, and pepper. Cook for about 15 minutes, stirring occasionally, until the sweet potatoes are tender.
- Stir in the chopped kale and cook for an additional 3-4 minutes until wilted.
- Create four wells in the hash and crack an egg into each one. Cover the skillet and cook until the eggs are set to your liking.
- Serve hot, garnished with crispy bacon and sliced green onion.
