4 slices thick-cut bacon about 3 ounces
2 tablespoons extra-virgin olive oil
2 sweet potatoes scrubbed clean peels on
1 ¼ teaspoons kosher salt divided
¾ teaspoon ground black pepper
2 medium avocados peeled pitted and diced
1 tablespoon fresh lime juice
½ teaspoon smoked paprika
3 tablespoons chopped cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the bacon until crispy. Remove and set aside on paper towels to drain.
- Slice the sweet potatoes into bite-sized rounds and place them on a baking sheet.
- Drizzle with olive oil, 1 teaspoon salt, and black pepper, then toss to coat.
- Bake in the preheated oven for 25-30 minutes or until they are fork-tender and golden brown.
- In a bowl, combine the diced avocados, lime juice, smoked paprika, remaining salt, and chopped cilantro. Mix gently to combine.
- Once the sweet potatoes are done, remove them from the oven and let cool slightly.
- Top each sweet potato slice with the avocado mixture and crumbled bacon.
- Serve warm and enjoy!
