2 tablespoons extra-virgin olive oil

2 sweet potatoes scrubbed clean peels on

1 ¼ teaspoons kosher salt divided

¾ teaspoon ground black pepper

2 medium avocados peeled pitted and diced

1 tablespoon fresh lime juice

½ teaspoon smoked paprika

3 tablespoons chopped cilantro


Instructions

  • Preheat your oven to 400°F (200°C).
  • In a skillet over medium heat, cook the bacon until crispy. Remove and set aside on paper towels to drain.
  • Slice the sweet potatoes into bite-sized rounds and place them on a baking sheet.
  • Drizzle with olive oil, 1 teaspoon salt, and black pepper, then toss to coat.
  • Bake in the preheated oven for 25-30 minutes or until they are fork-tender and golden brown.
  • In a bowl, combine the diced avocados, lime juice, smoked paprika, remaining salt, and chopped cilantro. Mix gently to combine.
  • Once the sweet potatoes are done, remove them from the oven and let cool slightly.
  • Top each sweet potato slice with the avocado mixture and crumbled bacon.
