Ingredients
2 cups fresh strawberries quartered
2 1-inch pieces orange peel
1/4 cup granulated sugar
1/4 cup water
2 sprigs fresh mint
1/3 cup Grand Marnier liqueur
1 cup freshly squeezed orange juice
1 bottle prosecco or champagne
orange slices for garnish
smaller fresh strawberries for garnish
Instructions
- To make the strawberry simple syrup: In a medium saucepan over medium heat, combine the strawberries, orange peel, sugar, and water. Bring to a rolling simmer, then reduce to medium-low heat and continue simmering, gently mashing the strawberries with a wooden spoon, until the sugar dissolves and the mixture thickens, about 20 minutes.
- Remove from heat, stir in the mint, and let cool for 30 minutes. Once cool, discard the mint and orange peel, then strain through a fine-mesh strainer. Store in the fridge until chilled, or up to 1 week.
- To make the mimosas: Stir the Grand Marnier into the chilled simple syrup. Fill a champagne flute with 2 tablespoons of the simple syrup, add 3 tablespoons of orange juice, then fill almost to the top with prosecco or champagne.
- Garnish each glass with a small strawberry, an orange slice, and a sprig of mint. Repeat until all glasses are filled. Enjoy!

For the best flavor, use fresh, ripe strawberries and freshly squeezed orange juice. You can prepare the strawberry syrup up to 2 weeks in advance.
