Ingredients

3–4 fresh peaches
1 cup blueberries
¼ cup pepitas
1 lemon
Olive oil
4 lemons
juiced
2 Tbsp + 2 tsp honey
¼ cup olive oil
Cracked black pepper
Instructions
- Start by washing the kale thoroughly, then remove the stems and chop the leaves into bite-sized pieces.
- In a large bowl, drizzle olive oil and juice of one lemon over the kale, then massage the leaves for about 2-3 minutes until they soften.
- Add the diced peaches, blueberries, and pepitas to the massaged kale, and gently toss to combine.
- For the lemon vinaigrette, whisk together the lemon juice, honey, olive oil, and cracked black pepper in a separate bowl.
- Drizzle the vinaigrette over the salad, tossing until everything is evenly coated, then serve immediately or refrigerate for later.
