Ingredients
3 ears sweet corn
husked and silks removed
1 large head romaine lettuce
chopped (approx. 4 cups)
1 large shallot
thinly sliced
½ lemon
juiced

kosher salt and ground black pepper

Instructions
- Preheat the grill to medium-high heat. Grill the sweet corn until charred and tender, about 10-15 minutes, turning occasionally.
- Once grilled, let the corn cool slightly, then cut the kernels off the cob and set aside.
- In a large bowl, combine the chopped romaine, charred corn, sliced shallots, lemon juice, and creamy Caesar dressing.
- Toss the salad until evenly coated, then add shaved parmesan and season with kosher salt and ground black pepper to taste.

Notes
