Ingredients
8 ounces of rotini
penne
or bow-tie pasta
2 cups fresh or frozen corn
1 cup diced bell peppers
½ cup finely chopped red onion
¼ cup chopped cilantro
⅓ cup mayonnaise or Greek yogurt
2 tablespoons lime juice
1 teaspoon chili powder
salt to taste

Instructions
- Cook the pasta according to package instructions until al dente. Drain and let cool.
- In a skillet, lightly char or roast the corn until golden brown. If using fresh corn, this enhances the sweetness.
