Strawberry Shortcake Easter Egg Bombs are a delightful fusion of rich chocolate and fruity strawberry flavors, perfect for spring celebrations!
Ingredients
12 oz white chocolate chopped
2 oz pink candy melts
½ cup freeze-dried strawberries crushed
½ cup strawberry jam
½ cup heavy cream
½ cup cream cheese softened
2 tbsp powdered sugar
1 tsp vanilla extract
½ cup crushed shortcake biscuits
crushed shortcake crumbs
fresh strawberry slices
edible gold sprinkles
melted pink chocolate
Instructions
- Melt the white chocolate and pink candy melts separately in a microwave or double boiler.
- Coat the inside of a silicone egg mold with the melted white chocolate, ensuring even coverage.
- Once set, remove from the mold and repeat with the pink chocolate, filling just the top halves of the egg mold.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, mix the cream cheese, powdered sugar, and vanilla until smooth, then fold in the whipped cream.
- Add the crushed freeze-dried strawberries, strawberry jam, and crushed shortcake biscuits to the mixture, folding gently until combined.
- Spoon the filling into the white chocolate shells, and top them with the pink chocolate halves to seal.
- Chill the eggs in the refrigerator until set, about 30 minutes.
- Decorate with crushed shortcake crumbs, fresh strawberry slices, edible gold sprinkles, and melted pink chocolate before serving.
Notes
Ensure to let the chocolate shells cool completely before filling to maintain their shape. These treats can be made a day in advance for convenience.
