Description

Chewy, buttery blondies with fresh strawberries and zesty lemon glaze. A refreshing citrus dessert that’s perfect for spring, summer, or anytime you want a fruity twist on a classic blondie.

Blondie Base

1 cup unsalted butter, melted and cooled

1 ½ cups granulated sugar

2 large eggs, room temperature

1 tablespoon lemon zest (about 1 large lemon)

2 tablespoons fresh lemon juice

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup fresh strawberries, diced small (patted dry)

Glaze

1 cup powdered sugar

23 tablespoons fresh lemon juice (adjust for consistency)

½ teaspoon lemon zest

Optional: 2–3 teaspoons mashed strawberries for pink color & extra flavor


Instructions

Prepare the Pan: Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper and lightly grease.

Mix Wet Ingredients: Whisk melted butter and sugar until smooth. Add eggs one at a time, then stir in lemon zest, lemon juice, and vanilla.

Combine Dry Ingredients: In another bowl, whisk flour, baking powder, and salt. Fold into wet ingredients until just combined.

Add Strawberries: Gently fold in diced strawberries. Spread batter evenly in the prepared pan.

Bake: Bake 28–32 minutes, until edges are golden and a toothpick comes out mostly clean. Avoid overbaking.

 

Cool and Glaze: Let blondies cool completely. Mix glaze ingredients until smooth. Spread evenly and let set 20 minutes before slicing.

Notes

Pat strawberries dry to prevent soggy blondies.

Use fresh lemon juice for the best flavor.

Don’t overmix the batter; this keeps blondies chewy.

Chill before slicing for clean edges.
