Ingredients
1 cup unsalted butter
at room temperature
3/4 cup sugar
1 large egg
1/4 cup fresh squeezed lemon juice
2 1/4 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup diced fresh strawberries
1 cup powdered sugar
sifted
1 Tbsp strawberry puree
lemon juice
about 1 Tbsp
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
- In a mixing bowl, cream together the unsalted butter and sugar until light and fluffy.
- Add in the egg and fresh squeezed lemon juice, mixing until well combined.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced fresh strawberries.
- Spread the batter evenly into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the blondies to cool completely in the pan before lifting them out and cutting into squares.
- For the glaze, in a small bowl, combine sifted powdered sugar, strawberry puree, and lemon juice until you reach a desired spreadable consistency.
- Drizzle the glaze over the cooled blondies before serving.
Notes
Make sure the strawberries are diced small for even distribution throughout the blondies. Adjust the lemon juice in the glaze to your taste preference.
